2 Igredient Pumpkin Cookies (So Easy Even a Caveman Can Do It!)


I was going to call this post "Super Simple Pumpkin Cookies, So Easy Your Husband Can Make Them" but my husband said it would be enforcing the stereo-type of the inept male.  He suggested using the word caveman instead.  Hopefully this won't offend any of the Geico Cavemen out there.

 In my husbands defense he's a very good cook, and helps me out baking a lot.  And he actually helped me with these cookies because for some reason the past 4 or 5  times I've tried to bake something I've had  massive, massive allergy attacks.  I sincerely hope this is a passing problem but I think I'm going to start wearing masks when I bake it's gotten so bad.  Needless to say I didn't have a mask today, but I did have a husband who wanted warm cookies.  I handled the spices and pumpkin, he stirred in the mix, I took over again when the dough was wet.

Are you ready for the Recipe:

1 Box Cake Mix + One 15 oz Can pumpkin + 20 minutes at 350 degrees = YUM!

If you'd like use one cup of fresh pumpkin puree (see previous post).  Huge taste difference, and well worth the little bit of extra effort.

We added cinnamon, cloves, and nutmeg.  You could also add a teaspoon or two of pumpkin pie spice, but this really is a no fuss recipe and a very forgiving one at that. You could also add nuts or chocolate chips. One More idea, cream cheese frosting, enough said.

Seriously it's that easy, and I refuse to admit how quickly the 3 of us in our family went through an entire batch of these oh-so-good cookies!  Hope you enjoy!
